How to Make Dairy Free, No Bake Chocolate Peanut Butter Cookies
Place a medium saucepan on the stovetop on medium heat. Add the coconut milk, honey, cocoa powder and salt. Whisk the ingredients together until they are well combined. Allow the mixture to come to a full boil for 1 minute.
Remove saucepan from heat and immediately add in the oats, chia seeds, peanut butter and vanilla extract. Mix until all ingredients are completely combined.
Quickly add spoonfuls onto parchment paper and flatten with fork. Let cool at room temperature for 20-30 minutes.
Feel free to add some extra sweetness and drizzle honey on top of the no bake cookies!

- 1 cup coconut milk
- 1/4 cup honey
- 3 tbsp unsweetened cocoa powder
- 1 pinch salt
- 3 cups quick cooking oats
- 1 tbsp chia seeds optional
- 1/2 cup peanut butter
- 1 tsp vanilla extract
Instructions
- Lay aside parchment paper (size of one baking sheet).
- In a saucepan at medium heat, combine coconut milk, honey, unsweetened cocoa powder and salt. Stir frequently until all ingredients are combined.
- Stir mixture at a full boil for 60 seconds.
- Remove saucepan from heat and immediately add in quick cooking oats, chia seeds, peanut butter and vanilla extract. Mix until all ingredients are completely combined.
- Quickly add spoonfuls onto parchment paper and let cool at room temperature for 20-30 minutes.
